【料理指南】
建議烹調至 三至五成熟 (Medium Rare / Medium),能讓肉眼的油脂香氣發揮到極致:
解凍與吸水:烹調前請將牛扒置於冷藏櫃徹底解凍。下鍋前必須用廚房紙徹底印乾表面水分,水分越少,越容易煎出香脆的褐色外皮(Maillard reaction)。
