【料理指南】
由於 T 骨扒兩邊的成熟速度不同,建議烹調至 三至五成熟 (Medium Rare / Medium):
徹底回溫與印乾:由於骨頭較大,下鍋前請務必置於室溫至少 20-30 分鐘,並用廚房紙徹底印乾水分,確保骨邊位也能均勻受熱。
大火煎封鎖汁:燒熱平底鍋,將 T 骨扒放入大火煎封。每面煎約 3 分鐘,煎的時候可稍微按壓,讓骨邊的肉也能接觸鍋底。
封邊與淋油:將側邊的西冷脂肪邊立起煎香。最後加入一塊牛油、蒜瓣及迷迭香,將融化的香草牛油反覆淋在骨頭與肉質銜接處。
靈魂靜置 (Resting):上碟後靜置 5-8 分鐘。這對於帶骨牛扒極其重要,能確保切開時肉汁完美鎖在肉理中。
