【料理指南】
由於這款牛扒份量厚實,建議烹調至 三至五成熟 (Medium Rare / Medium) 以保持最佳肉質:
徹底解凍與回溫:烹調前一晚由急凍櫃移至冷藏櫃(0-4°C)慢速解凍。下鍋前 20 分鐘取出置於室溫,並用廚房紙徹底印乾水分,這是煎出金黃外皮的關鍵。
大火熱鍋煎封:燒熱鑄鐵鍋或平底鍋至冒出微煙,無需加太多油。將牛扒每面大火煎約 2-3 分鐘(視乎厚度),將肉汁完美鎖在內部。
封邊技術:由於是「巨獸級」厚切,記得將牛扒立起,煎香側邊的脂肪位,令牛油香氣滲入整塊肉中。
