【料理指南】
A5 和牛油脂豐富,建議烹調至三至五成熟 (Medium Rare / Medium),以品嚐最佳口感:
室溫回溫:烹調前請先將牛扒由急凍櫃移至冷藏櫃(0-4°C)自然解凍。下鍋前 15 分鐘取出並放在室溫,用廚房紙印乾表面水分。
香煎法:使用鑄鐵鍋或平底鍋,大火燒熱鍋底(無需額外加油)。放入牛扒,每面各煎約 1-2 分鐘(視乎厚度)至表面金黃焦香。
靜置靈魂:出鍋後將牛扒放在溫熱的碟上,靜置 (Resting) 3-5 分鐘。這樣能讓肉汁回流,切開時肉質更鮮嫩多汁。
